New install

I have a new installation I'm taking on 3 separate buildings, I have 1(16 channel nvr) that is taking 4cams on 1st building, 1poe switch with 4cams on 2nd building, and 3rd building is taking 4cams poe switch.. Do i daisy chain to each device or run 3 cat6 to router?

The general rule is video traffic does not go through the router.
A network drawing would be helpful.
Do you need to use the routers to connect between the buildings ?
Are the building on the same subnet connected by ethernet cable ?

Should I run cat6 from nvr to switch hub to switch hub?

You can use cat6 or cat5e. I do not see a network drawing on your posts. If you are running cable between building make sure that it is gel filled.
