my lorex system and camera's (2K @20FPS) support h.265. Should I just enable them all to record at h.265?

Definitely worth testing it before assuming all is good. I have tried using Hikvision x265 and had issues. Appears to work at a glance but then find the stream is glitchy and not running smoothly. I was told by an engineer that Hikvision themselves admit their support for x265 was shoddy at the time...but it has been 12 months since I tried it so maybe it has improved in latest firmwares.

H265 requires more processing power than H264 so you might find it adds to the lag. And your viewing device may struggle to keep up, especially if several cams are transmitting in H265. But test it out.
