I'm talking about the adjustable knob between the camera and the mount. It can be removed by hand, then the cable will be exposed. That's the way my HIKVISION bullet cameras were designed anyhow. Maybe other designs are more secure?

Other designs are certainly much more secure.
The Dahua Square Face Bullets ( like the Starlight, 4K, and Lorex 4K models ) are very solid, once installed it will be a challenge to move their angle or break their stem ( possible but will require some strength ). Also you will need a hex screw driver to adjust.
The Dahua circular mini-bullet while it has less metal is still strong and you will need a phillips screw driver to adjust the angle. (
Amcrest Circule Mini-bullets iirc are Dahua OEMs )
The Dahua Turret - such as the popular startlight model people like here - with the case and base made out of metal are very solid also, and you will need a hex screw driver to loosen it and to remove it. ( note the cheaper Chinese market version has a plastic base, which should be easier to break / tamper with )
The Dahua Mini-dome - also will need a hex screw driver - 2 screws. If need you could possibly get a security screw to replace the 2.
