I've been using ZeroTier lately. Could still run stunnel over it, although that seems redundant. But it obviates the need to open ports, self host a VPN, run ddns, etc. in most cases. I found it to be easier than configuring stunnel.
I found Server was a little less heavy with the useless add-ons out of the box. Didn't love that task manager didn't show GPU utilization in task manager as I was tuning BI/QuickSync.
By DVR, do you mean a separate system that continuously records? Not a bad idea if your primary box is unreliable or you can't get the motion detection tuned quite right.
Just noticed GPU utilization is touching 100%. Not continuous but if the SVC change doesn't work I might pull a couple cameras off hardware acceleration to see if bringing GPU utilization down helps at all.
