I need to build an additional Blue Iris server and wanted to know if it will take advantage of 6+ core CPU's, such as the Core i7 6800 or 7800?

I am currently running 12x Dahua DH-IPC-HDW42A1EN-2.8MM cameras on a 4790 at 720p and 10 FPS. I originally had 16 on the server but found that when the CPU is at 100% it was too difficult to review or export footage.

You want a processor with intel HD graphics so look at the 6700 and 7700...there are new eighth gen 6 core being released with intel hd...that said, you have blue iris setup incorrectly....your 4790 will handle your 12x 2mp cameras with ease....you would be at less than 20 percent cpu...
you need to enable direct to disk and hardware acceleration...see wiki with instructions..

Thanks so much! That dropped the CPU usage to at least 30% with the 16 cameras active!

did you also enable hardware acceleration? are you running the 16 cams at 1080p or 720?

Yes, I did. It didn't affect the CPU usage as much as the direct to disc I am sure it still helps. They are at 720p. This is a life saver because we were looking to get another 16 cameras. Now we may not have to get an additional server at all.

EDIT: There have been a few big spikes here and there but its pretty much at 25% average CPU usage right now. The real test will be tomorrow when we have hundreds of people moving around. Right now there are may be a dozen in the building.

25 percent is still high for that system with only 16mp recording at 10fps...are you logging in remotely to view or using a local monitor..

I am viewing on the local monitor.

There are times where I see it below 25%, even as low as 15%, but it doesn't last very long, just a few seconds. There have been times I have seen it spike to 40% for a period of a minute, but it would go back down. I'd say more often than not I catch it at 25% though. We are pretty happy with it regardless.
