I've never done a fish eye before. Client is asking me to put one above his bar/registers in a restaurant - Is this the right application for this?

Additionally - when you break out multiple views on the fish eye, does each one of those take up a channel on the NVR? Say I want 4 views from that fish eye - does it take up 4 or 5 channels on the NVR? or just one?

if I end up going with a fish eye - is there a particular dahua model number that you recommend?

It all depends where you do your dewarping. Ideally you have the camera set to full view mode (fisheye) at a single, high resolution stream. Then you use the viewing client to dewarp the video in real-time with a virtual PTZ-type interaction for the user. If your client software doesn't support that, then you end up dewarping on the camera and sending out one stream with gridded segments/quadrants, each segment being a dewarped portion of the view.
