Intel has refreshed their line up of Windows 10-based mini pcs. Any thoughts on whether these would be suitable for a 8 camera, Blue Iris setup?

Intel® Core™ i5-7260U Processor
Intel® NUC 7 Home Mini PC - NUC7i5BNHXF with Windows* 10

If the performance is acceptable for an ip camera system, I am intrigued by the potential energy savings that these mini pcs would generate.

those are older 7th generation processors and are weak....the number of cameras is irrelevant..its the total fps and megapixels that matter.
the power savings is negligible as modern desktops are very efficient. You wont make your money back by overpaying for a nuc..

Also consider storage, there is on-board, but it is limited, often depending on what model you get, if you want/need to keep storage local then a NUC has limits, you would need to consider NAS/SAN or 'quality' external, and at that point the NUC ceases to be fit for function as such

It's nicer to have something a hard drive or two actually fits inside of.
