I've got 16gb of ram at my disposal but for some reason BI will only use ~2GB of ram.... i've got 4x 6MP cameras running. Is there any way to buffer video to RAM before writing to disk to space some CPU cycles/io?

RAM is only used by BI for processing/input buffers. Disk write buffer is controller by OS in this instance.
In essence, BI only uses as much RAM as it needs and you can't save any CPU from writing to disk.

If you want to use more RAM, you could increase the pre-trigger video buffer time on all your cameras. Of course then your clips are longer if you record on motion detection.
