Why can't I see recordings?

Ive had the PC setup since Sunday but from looking at it today I can only seem to see recordings from yesterday nothing from Sunday or Monday, some on all 4 cameras, others on either just 2 or none at all.
What am I doing wrong?

I should add its set to continuous record and motion detection.

Depends on the size of the drive and the amount of free space you're willing to allocate for it. A dedicated drive for storage is the best solution, WD Purple in 2, 4 or 8GB.

I have an 8tb so if i set it to 9999gb will it automatically erase older recordings once the drive is full?

No...that is way more than 8tb...you need to allocate properly

What would you suggest, does this have am impact on how long they are saved for?

An 8TB drive actually formats to about 7.75+GB. How long they are stored is set in Blue Iris. Have a look at the WiKi at the top of the page, the video tutorials in the Blue Iris section of the forum and the Help available in Blue Iris.
