After running an update my Dahua NVR now shows the "AI" menu but I don't see anywhere in the AI perimeters for the PTZ camera for me to select those fields... Sorry about the multiple posts/questions... just catching up to all the replies.

Ok, so track time is just the amount of time the camera follows the person right? I left that at 15. I would cut it shorter but it takes some time for the camera to zoom in and focus... I wish there was a setting that allowed the camera to only take a snapshot once zoomed in and focused. And...
