    Because POE is 48v. Some cams capable of POE will also have a secondary power dongle which is usually 12v. Higher voltage carries current much better over a distance on small copper wires. If they used 12v over 100m on hair-thin wires it wouldn't run a thing by the time it got to the far end.

    It is the standard for all devices regardless of POE. If it will plug into a router or switch it will work on 100m of cable.

    Do they use those for exposure and gain settings or just for day/night switching? I'd assumed that it was day/night switching and exposure/gain/etc was done by actual image analysis.

    There's privacy masking in the camera->video->overlay section but I don't know if it'll change the gain or just not display the bright light while the scene is still artificially darkened.

    I'd go landscape too. You don't need to see your own plate, you can take his light out of the picture (bright and aimed directly into your lens), plus you see more of the street, although that's fairly well covered already by the front door camera.
