Are you still looking to run this in a VM? Yes, it can be done. I have XProtect Essential running in a VM (Hyper-V on Server 2012 R2) with no issues. CPU usage is low (10%). Not sure why you would be running at 100%, but likely because you have 6 cameras running. I have only 4 2MP cameras...
