Going to be running wires to the main switch i purchased however the area i have it located is in a room with two Florescent lighting fixtures.

I've read online that you should try to avoid wiring around these fixtures but I can't really avoid it in certain spots. Any advice on how far away from the fixtures I should keep the cable to prevent interference issues? I have Cat6 (solid, Riser rated, 23awg, 500 mHz) that i purchased from Monoprice.

Field strength should be proportional to 1/d^2

It really shouldn't be a problem, as long as avoid running your cables within a foot or two of the fluorescent / led fixture.
