Hikvision and other camera brands can record to storage devices right?

Like in addition to being able to remote into and view live footage, these cameras have the ability to record their footage directly to magnetic storage for archiving and viewing later right? Is the 10/100 PoE network connectivity on most of these cameras a bottleneck? I mean that's basically only 10 MB of write speed...

10 MB is a lot, cams generally can record using up to 16 Mbits which is 2MB

To give you a comparison for 1080p Youtube videos you need 8Mbps(lowercase b) at 25/30fps at 50/60fps you need 12Mbps, and I believe Youtube uses H.264 compression on some of their videos as well as other codecs
