I am preparing to install some HIKvision DS-2CD2387G2P-LSU/SL panoramic cameras. I see they have a couple of extra cables attached: "Alarm" & "Audio" (each with 4 connectors. What am I supposed to do with these? Will I get intercomm functionality without them?

They are extras in the event you want to add a better speaker, mic, or connect to an alarm system.
Most don't use them. Simply tape them up and shove in the junction box or in the wall or ceiling.
Some have even simply cut them off, but I wouldn't suggest that.
