Probably a silly question but is it feasible to create a couple of rj45 connector to an analogue connectors that allowed you use the existing analogue wiring to connect a new IP camera. if so is it likely to work better than wireless?

You can't send ethernet over coax without a balun. It's not a matter of connectors so an rj45 to coax will not work. If you simply do not want wireless, than get an ethernet over coax balun set and that
will allow you to use your IP camera over the existing rg59. Or another option is to run a new wire.
