As a starting point can I install a POE camera, connected to my home network that can be monitored remotely? My system may have one, maybe two cameras and plugged into my home router. I can forego the NVR, or Blue Iris, for now. Does this work?

I can use the camera's onboard storage for short periods of time. Access it from my off site system.

Is this doable? Or am I just under-informed?

The cameras do not have onboard storage. You would need to find a camera that has an SD card slot to add that to the camera for onboard recording.

But you would not want to run the cameras through the router - not only are most wifi routers horrible at passing this kind of traffic, ironically enough surveillance cameras are easily exploitable when exposed to the internet. Look at OpenVPN to view them remotely.
