Understanding Field of View 2048x1536 vs 1920x1080 - 2CD2132F-I

Hey All,
Long time lurker, reader & learner, but finally came across something i haven't been able to figure out. This question was sort of asked back in 2015 but never got an answer that seemed fully address the root of the question. So I'm gonna try asking again with a more technical focus.

I have a few Hikvision 2CD-2132f-i cameras
So this is a 3MP camera which is a 2048x1536 resolution in a 4:3 ratio.
I'm assuming this is the native resolution of the sensor. Is that correct?

I ask because this next fact would imply that its not:
When I select a 2MP 1920x1080 resolution my horizontal FOV increases marginally and my vertical FOV decreases slightly.
This seems counter-intuitive, as I would have expected something of the following scenarios:
1. The 1920x1080 resolution would be using a subset of the 2048x1536
--> So the FOV in both the horizontal and vertical would decrease​
2. That it would scale the 2048x1536 down to 1920x1440 and then remove the 180 pixles from the top and bottom of the image to get a 1920x1080 resolution
--> So the FOV in both the horizontal would stay the same and the vertical would decrease​
3. Pillarboxing the 4x3, but this obviously isn't the case, nor would it make sense in the purpose of security camera footage.

BUT since the horizontal FOV increases a when set to 2MP this really confuses me. So why is that?
This would imply to me that using 2MP gives a lower quality image not only because its lower resolution over the same FOV, but the wider FOV leads to an even lower pixels per foot.
So is using 2MP actually a double hit on quality since its both few pixels and a greater view or am I missing something?
 
Going to put a bump on this after a few months of still not being able to figure out how the camera's FOV and resolution are related.
