I am going to be installing some ethernet run on the outside of my house to some cameras. I feel that I'll need to protect the Ethernet from UV sunlight. Outside of metal conduit, are there any recommended wire management (like Legrand Cablemate) that people recommend that are ok to use outside? I see most of the stuff is listed as inside use only.

+1^^.
Don't be stingy with conduit straps/clamps, otherwise you could wind up with unsightly sags and curves over time, especially on horizontals.
Don't "trap" the ends of a long conduit run by butting the ends against something immoveable, it must be free to expand/contract to prevent bowing. The correct straps/clamps will allow the movement it needs.
Paint to match with latex paint...it'll help with the UV and ozone resistance.
