Capture Mode

OK, newbie here. I have searched the threads but not come up with a satisfactory answer. What exactly does capture mode do?

I don't know what this means either. The selections are resolution. The Help is:

Capture Mode: It's the selectable video input mode to meet the different demands of field of view and resolution.>
