Here's plenty of experience and I can assure you have hours of reading about that topic.
On top of the brands you mentioned I can recommend to look at the various Dahua models as well.
Besides having a great range of hardware, the Scandinavian Dahua office is based just west of Copenhagen and you could probably knock on their door to see the touch and feel of the different models they have there.

Getting the hang of it
I am receiving my IPC-HFW2231T-ZS-S2 tomorrow. And I wonder what the best way to trigger a snapshot is.

Yes it can, install an SD card into the cam. Then setup IVS rules for triggers.

Getting the hang of it
i have tried to setup detection and it works at daytime, but at night and shutter speed is 1:2000 the camera does not detect motion.
can someone tell me what I am doing wrong?

What is it you are trying to detect with a 1/2000 shutter speed? License plates?
