I can't seem to find the setting to remove the time and date overlay in UI3. Could someone point me in the right direction?

Blue Iris controls that. See camera properties > Video tab. I recommend you simply delete the overlay since it is redundant information, but if you want to keep it you can uncheck the box "Display overlays live". Then also on the Webcast tab you can disable "Add text/graphic overlays from direct-to-disc BVR" to make it not show up during clip playback.
