Idea for mounting on uneven surface?

My home has a stone facade on parts of the house where I want to put a couple cameras. The stone is uneven and has many ridges. Does anyone have experience with this? I'm thinking the worst case I can just mount it on top and have big gaps between the camera and the wall. Not ideal but no way I can shape a junction box to fit flush.

Mount as you suggested, put any shims needed to keep it stable and then either seal around it with Silicone or a "sanded" grout mix to match the color of the stone.
I recommend "tuck pointing" the grout mix behind it.

I’ve seen previous post here where they use a grinder and grind down a flat spot. If it’s real stone you may need a diamond blade

Don’t know what cams but the Duhua boxes have a foam backing so provided you mount the box in the middle of the tile the foam should help even things out. Any other gaps the a bead of silicone over just the top half of the box should help keep water out.
