I am booting up a new optiplex win 10 pro i7-6700 server and was wondering what if anything people were installing or un-installing from thier servers to help them run most efficiently?

nope, I did some normal windows tweaks like setting a static pagefile and stuff, that's it.

LOL I don't know what a static pagefile is but will research it on youtube and geterdun.
Anything else simple like that?
These are exactly the things i need to learn about and implement.
Also what apps are you using for remote access.
Any other app that Blue Iris users are installing on the server as a add on?
There are thing that I don't know that I don't know... but learning quickly.

that is just something I do to every winders install, also disable automatic updates so your box doesn't reboot randomly. I installed stunnel so I can access it remotely without using VPN. I use the blue iris app for android and the web site on my computer. I wish blue iris had the equivalent of smartPSS for dahua's but they don't. The website is only for viewing, you can't do much else and things like ptz control are a little sluggish so I usually just control it from the cameras web page lol.

Uncheck Safe PTZ option to let you click and hold to pan and tilt, instead of moving in little jumps.
Enable H.264 live streaming (under the HTML5 Canvas options)
It is the next best thing to having the camera's web page and plugin open.

Method 1
Launch settings and go to Update > Advanced. Here, you must disable P2P
sharing, as it’s believed that, in some cases, your CPU usage could
skyrocket because this process runs in the background. Simply click the
“choose how updates are delivered” option and toggle “updates from more than
one place” to off to make sure no process runs in the background to
distribute updates to other users in your network or across the web.
Method 2
Additionally, it appears that, in some cases, the notification system is at
fault for the high CPU usage, and some users recommend disabling the Windows
10 tips from the very beginning to avoid this. To do this, go to Settings >
System > Notifications & Actions and simply uncheck the box that says “Show
me tips about Windows.” If you’re already familiar with Windows 10, you
should have no problem at all. Disabling Windows 10 Tips could help too.
Method 3
If your Windows 10 version already has support for Windows Spotlight, there
are some recommendations to disable it. Once again, background services are
believed to be at fault for what’s happening with the CPU, so the high usage
could be the result of the services running in the background. To do this,
go to Settings > Personalization > Lock Screen and change Windows Spotlight
to Picture. If you have Windows Spotlight, just switch to Picture to avoid
the problem.

The page file isn't much good unless you run out of RAM (or get close). And when the page file is in use, it tends to make performance suck, so you try to avoid that at all costs by buying more RAM 
Set the page file size to whatever you want, but put it on your fastest drive only. I don't outright disable the page file anymore after I learned that was making some programs crash at startup, but if I am short on space I will reduce its size.

do you record bi to main drive first (for me a 128gig ssd) or straight to purple?
i see you can send files older than 7 days to another drive

Operating system, Bi, BI Database on the SSD. Video should be recorded to the Purple drive.
What size SSD for just Win10 Pro and BI? How does the BI database work and how much space does it need? I assume it depends on # cameras and days of storage, but maybe also the # events that occur where snapshots or videos are being triggered. I will have 6-IPC-HDW5231R-Z's and probably one other 2mp camera at this time. I was thinking of Samsung 850 EVO - 250GB - M.2 SATA III Internal SSD (MZ-N5E250BW) for OS, BI, and BI database. I expect this will be way more than needed but only cost $12 more than a 128GB
120gb is a great plenty for Windows + BI + BI Database.
You could get away with 60 gb in a pinch, but I wouldn't want that little headroom as bloated as Windows can be these days.

In case anyone is interested, SanDisk wrote a lengthy but informative 'white paper' (=> here <=) that extols the virtues of using SSDs also for storage of the video files.
