Has anybody done a non POE setup? What is required to power the camera? Volts? Connector type? etc.

12v, 3.5mm Barrel Plug, heavy gauge wire, and wont reach as far as ethernet will or provide enough power for hungry devices.

or 24vac, hardwired, light guage wire, long reaches with high current.. perhaps farther than ethernet, camera support limited.

whats wrong with PoE?

Nothing is wrong with POE but most swtches I am looking at only have POE on half of the ports.

Also, are you saying the cameras run on 12v AC? 12v DC? or 24v AC? You weren't clear

12vdc or 24vac or poe (48vdc) are the only real solutions.. dc drops voltage at an incredible rate over distance, thats why PoE is 48vdc then regulated down to 12vdc.. it can tolerate a huge voltage drop due to the length of the wire, a 12v source cannot tolerate a huge drop.. mebe a few volts and then it'll shutdown.

you can get poe switches with 48 powered ports up to 700w of power, just depends on what your willing to spend.

Ok. So you are saying that POE is 48 volts DC through the line. Correct?

Then you are saying it gets regulated down to 12 volts DC. Where is it dropped to 12vdc? Inside the camera?

Does this mean I need to feed 48 volts DC to the camera or 12 volts DC.

if you power it via ethernet port it will be regulated down to 12v internally, if you provide power externally it will need to be regulated to 12v externally..

if you power it over network cable, it needs 48vdc.. if you power it over its 12vdc barrel plug it needs 12vdc.. some power hungry cameras like my big PTZ or gun cam will also run off 24vac and internal diodes convert alternating current to a direct current half the voltage (12vdc)

@nayer covered most of it. It's easiest to install POE cams. Cameras without POE can be powered with the converters he mentioned.

Larger cams may draw to many Amps to support either of those. Only option is to use a 12v or 24v adapter. Be sure to have an outlet close by because DC voltage does drop fast.

Here's a calculator to give you a rough estimate at how quickly it does drop off.
