Most commonly hard wired systems are communicating to the manufacture's servers for updates or P2P communication.
P2P communication is for the app on your phone to connect when you're not on home network/wifi.
It is possible to fully disconnect from the internet (setting a rule on your router to block access) and then view on your phone remotely through a hosted VPN. This adds more complexity in setup and notifications do not always work properly.
