I'm trying to simplify some of my wiring. I currently use a WS-GPOES-8-7 POE switch. I can order a WT-GAF-12v12w. Do y'all feel it will deliver enough juice so I just have one line off my 48V POE and run my PT5AM22XH200?

No. You have to be extra careful using these passive PoE switches / injectors.

According to the Can'tONK specs, the camera needs 24-36 watts of power. Presumably that's IR off / IR on.
