1. The recommended maximum cable distance for both Cat5e & Cat6 is 300ft?

2. The only benefit of using Cat6 cable is for future-proof?

3. If the distance from Nvr to Poe switch is 300ft. Will the maximum distance from Poe switch to ip camera also be 300ft giving a combined maximum total distance of 600ft?

Yes, its actually 100m which is 328 feet.

Will a Poe switch extend the distance to 200m?

If you put the switch in the middle it will. You'll most likely get quite a bit more than 100m without a switch in the middle but 200m without help will require some luck. You'll pretty much be guaranteed 100m to the switch and 100m past the switch though. Not all cable is the same. Manufacturers rate their own cable on the honour system so you know how that'll often turn out. Is Your Cat 6 Cable a Dog? -- Blue Jeans Cable

If you need to put a switch in the middle you'll need power there and a weatherproof spot. I'm assuming it'd be an outdoor run?

The best part of cat 6 for cameras is the 23AWG wiring. Better for POE, plus it's a bit stronger and break-resistant than 24AWG of Cat5e. Definitely stay away from 26ga cables, and remember to use solid copper (not copper clad aluminum (CCA) or stranded) cables. Burial grade gel filled solid copper. Cams don't need cat 6 for speed. Even cat5e is overkill for cams as far as speed goes. You just have to keep your fingers crossed that you got a good batch if you plan to exceed 100m because it's not always great even out to 100.

Yes. It definitely wouldn't hurt when trying to push length limits.
