I am wondering if anyone here has experimented with the use of a single camera installed independently? No NVR. Just an installed microSD card. Could that minimal system be useful or is the recording time too short?

Sure it's done frequently. It depends on the size of the SD card, and the frame rate and resolution you choose to record and what your definition is of "too short".
You can watch the live video with Tinycampro.
I have a cam with a 128gb sd card, that records the substream of the cam, and it holds 25 days worth.

A friend has a need for a minimal system and is intent on purchasing a Ring doorbell. I don't know how a single IP camera would compare to that in terms of ease-of-use and effectiveness.

She has decided to try a few of these cheap wifi cameras...
