Three monitors, the left and right ones minimize on their own.

W10 Home box. I have three monitors, BI is up on the left one, I do most of my work on the center one and use the right one to monitor an IRC channel.

I'll be working and then I notice the left and right monitor have minimized. I have no idea what is causing it.

Can someone tell me what is going on?

So are you saying that your 3 monitors display full screen at the start of your viewing session? Then after a short time of looking at the keyboard, you look up to find your outer 2 monitors are minimized to the dock?

If so, I’d say you hit the Minimize command key while you were “hen pecking” the keyboard.

If not, I’d say your graphics hardware is underpowered.
