Is there such a beast as a Universal NVR that accepts multiple camera companies?

Ok - not quite the same...

Summary - if the NVR and cameras support ONVIF profiles - then yes, to some degree you can get compatibility.

The issue is that often the newer and more advanced features are not well enough defined by ONVIF, so the best answer is to pair your OEM of the NVR with the same OEM for the cameras.

Otherwise, look for 3rd party VMS software ( like Blue Iris ) instead of the camera OEM NVRs / VMS.
 
Most do to some extent, it's kind of the point of the ONVIF spec. Compatibility is a relative thing, one may be plug in play while the other can be made to mostly work after 3 hours of cursing yet technically it's "compatible".

Software VMS typically are the easiest to deal when mixing camera brands, but even some software is locked to a specific mfg's cams. Blue Iris is a pretty affordable option compared to some of the other things out there.
