Upgrading from a HPE Proliant Microserver Gen7 - Homelab \ NVR \ General dogs body server

So, I'm looking to update my microserver from a Gen7 as the poor AMD Turon 1.8GHz duel core struggles to run windows, let alone anything else.
And, as I'm learning my DevOps craft, the poor thing takes a beating regularly.

My requirements are as follows
  • BlueIris (single camera for now, looking for more in the future)
  • PLEX
  • Docker
    • Jenkins
    • Kubernetes
    • whatever I want \ need
  • NAS
Now, where would you go with this? I'm currently leaning towards either a HPE Microserver or Tower Server, either Gen8 (Intel Xeon 1225v2 based) or current Gen10 (AMD Opteron quad core)
Or, do I build something myself and forgo the server grade hardware (ECC RAM etc) ?

Probably going to need a Raid controller as I plan on using Raid 5 with 4 2TB Drives + a small SSD for the main OS....
