I like your reasoning! I think this would be a great way to re-purpose a camera that otherwise would be sold or thrown away. I know I have bought a couple of cameras with fixed lenses that didn't have the FOV I liked when I installed them. I now have learned that a varifocal allows you to "perfect" the FOV. Like many others here I also plan on replacing many of my cams with these varifocal starlights.
I'm curious what your camera looks like with this much larger varifocal lens when you re-assemble all the parts back into the camera housing. Would you mind posting a pic of your finished camera?
