How would I hook up this mic to my camera?

Connect power coming from the power brick to the one side of the white connector by it's self.
Then on the other side of the white connector, twist the power leads from the camera and the Speco together, and insert into the other end of the white connector. There are screws in the white connector that you tighten to hold the wires in place.

Then use the male plug on the opposite end of the speco to power the mic.

Is there such a thing as a POE splitter with 24 volt output receptacle? Guess I am apprehensive dealing with the wires like that..

Yes sir, exactly like that. Use no less than a 16 guage wire from power brick.
Well with the cat 6 I have a 50 foot run. I think I could probably do less than that for power but maybe 50 feet would be safer. I wouldn't think wire would cost all that much? I would probably want to have the wires inside where they are spliced together with the brick. Then it will come outside where it hooks into the specco

Big thumbs up as this worked. I now have sound. Gotta get the mic in a place where the wind won't effect it as bad. I also stole a muff off from my old headset to try and muffle the wind.
