Just wondering how to deal with Hikvision's dual power/POE input cable into the camera? It looks like the input cable is not detachable, which means the hole you make in the wall must be big enough to accommodate this rather large cable.

How have you avoided making an extra large hole to accommodate this cable?

On that note, are there any other camera manufacturers that have a thinner cable and will work with HIKVision NVR's (e.g., motion detection notification, etc.)?

use a matching junction box
 
I'm trying to make the installation on the smallest footprint as possible (visibility.) What would you recommend for a small bullet cam that does POE 1028p?

I dont recommend bullet cams ever...those mini bullets will have spider web issues...turrets are the ideal design...see the dahua starlight fixed or varifocal turrets...they have mini domes as well but with no/or weaker ir...either way you will need a junction box or make the hole...there are some more expensive models that will accept an ethernet connection inside the housing...

Is the EXIR Ir visible at night? If so, is it possible to turn this off via software? Are there any other lights that are visible?

Why is it an issue to drill a 7/8” hole? The camera is plenty big to cover it...

yes and yes buy you wont have ir light if you turn it off....you dont want your cameras hidden...there are no other lights.
