I think B would normally signify the colour of the camera being black.

I am not so sure, i thought B was for black but I am not so sure now as :
it seems that there are differences for example

DS-KD8003-IME1(B) FOV: Horizontal, 146°, Vertical, 82°
DS-KD8003-IME1 FOV: Horizontal, 180°, Vertical, 96°

does anyone have any knowledge on it

Its same as in cameras or NVRs, having B,C,D tag

Thats hardware revision. B one will get newest releases while non B is EOL

The villa stations like 8113-wme1 already have C revision

B have different cmos (older had 180° fisheye, new ones 146° V)
B have 12V DC output (in non-B with poe it was working, but wasnt specified like should not be used)
B have already newer firmware
In my experience with Hikvision never get older ones unless you are 100% sure you need older one (like in 2wire intercoms that are not compatbile with new Y versions etc).

Nice catch regarding FOV

Regarding output, on older version it worked rly good, on B version varry between 6 to 12V barely 0.5Amps sometimes itll work sometimes wont

Hence.5 amps AC bolts wont work as they draw up to 2amps of DC when unlocking

Better to use low power locks that draw about 250-300mA, and even better just install additional power cable or 2x lan and use separate circuit/psu for lock.
Dc out can also be used to power some card readers like DS-K1107AM, or illumination in the exit button, so not that useless.

Or just 1 Cat5 or 6 and crimp out 1,2,3,6 which will give 100mbit network + poe and leave 4,5,7,8 for 12V PS in.
