Ring alarm system still considered a reliable solution?

Get your neighbours to talk to any decent Security installer in their area. There are a plethora of 3rd party IP and cellular monitoring modules that capture from an old style dialler, convert to an IP or cellular signal and forward to a monitoring company. Usually faster than plain old copper...

    SimpliSafe Alarm easily bypassed

Got a SimpliSafe alarm? Might want to consider some other options! The scary thing is, I know of at least 2 other brands that use 433Mhz wireless devices. Hopefully not as easily overcome as this.

Door alarm? Secure not easy to disable.

Probably best to have a flush mounted reed switch installed into the window frame. Any other type of reed switch will be surface mounted and easily messed with. Do you have an intruder alarm already?

    DSC keypad zone issues

It's been a while since I worked on a DSC, bit I believe you can't have eol resistors on some zones and not others. Pretty sure it's a panel wide setting. When you say you created a test line at the panel, do you mean you wired the door contact directly in to each zone? Best way to test each...

Help with nvr p2p device offline.

Right. I guess I should consider myself lucky then! I'm in New Zealand, and using a wireless ISP. They give each customer a static public IP as standard.

Point to Junction Boxes for Soffit Mount?

Ok. I haven't had an issue with them, but I guess the more protection against water ingress the better.

Help with nvr p2p device offline.

Dahua P2P doesn't require a static IP address. I've had a bit of trouble with P2P lately, same as you describe. Device says P2P is enabled and online, but only some devices can connect, others can't. A reset of the device has sorted it out thus far, but it is annoying. Try restarting the NVR and...

NVR with Display in a different room?

The other route to go down which I find to be the most reliable is to use a Dahua NVR as a spot monitor output. For example, a Dahua 4116-4KS2 is a cheap NVR, which you would connect to your network (so just a cat5e or cat6 cable) and then use the HDMI output of the 4661-4KS2 to any HDMI monitor...

Point to Junction Boxes for Soffit Mount?

For what purpose? The RJ45 covers seem to work really well to weatherproof the connections on case of water ingress. Am I missing something?

    Waterproofing cameras?

Also, if using Dahua cameras, use the RJ45 plastic cover / seal that comes with the camera. I've had a camera junction box filled with water (roof leaked) and the camera kept trucking on because it had the cover / seal installed.

    DSC PC560 Alarm

*2 doesn't show tamper alarm on this panel. The only possible faults shown with *2 are shown here: You may have your PIR wired incorrectly. Could you take a photo of the PIR wiring and post it?

    DSC keypad zone issues

You could install an expander in an enclosure (or behind the keypad in the wall). PowerSeries 8-Hardwire Zone Expander | DSC Security Products | DSC Expander uses the same com bus that the keypad does, so no extra cables required. How many cores do you have between keypad and control panel?
