I've looked through the help files, etc. and see that I can listed to camera audio via UI3, but I can't see where (or if) I can talk back. Am I missing something?

You can't talk back through UI3.
There are a number of obstacles to doing that right now.
1) Blue Iris doesn't have a web server endpoint capable of accepting a data stream from a web browser. (web browsers are rather limited in the ways they can stream data OUT to a server)
2) I don't have a camera with working 2-way audio to test with.
