Blue Iris computer for 5-8 cameras

I'm sorry for yet another computer question thread. I'm reading and learning a lot but wanted to put my specific use case forward.

Starting with 5 3mp cameras (nothing's purchased yet, so feel free to chime in on those too) - could go up to 8 over time.

I'd also like this computer to run as a Plex server, accessed maybe for one-two movies a day, never simultaneous.

Questions:

1. Can I get by with a current-gen i5?
2. Does clock speed matter?
3. Is 16gb of memory plenty?
4. With 5 cameras, would Intel graphics suffice or should I go with an nVIDIA card for the attached display?
5. Should I outfit it with an SSD boot volume, then have a spinning (external maybe?) disk as the video storage drive - or is it better to just have one giant spinning drive?
