Does the alarm signal also come through the CAT5 cable to the NVR or Blue Iris, or do I also have to run another cable to wire up the 3 alarm wires on the pigtail of this Dahua dome camera?
It depends on what you want it to do. Alarm I/O on camera are mostly used for external devices like at adding a PIR sensor, floor mat sensor, strobe light or a door chime, etc.

If you want the camera to mark events or record a video when an alarm is triggered, this is done through Ethernet cable to a NVR, you will not need to add wire for this and those alarm wires can be stuffed it inside a junction box out of the way.

Ah, so those alarm wires are to be used to EXTEND the use of the alarm function transmitted via the CAT5. Got it, thanks.

This particular camera model only came with Chinese instructions in the box, so I am left at quite a loss on a few things.

Because its a lower end china market camera not intended for international use.
