First I would like to say I did a lot of reading and did not find a exact answer for what I'm looking for. I would like to upgrade the firmware for my DS-7108N-SN / P to add newer features and possibly some stability. I believe my camera are Chinese that were changed to English by the dealer. I'm hoping I can upgrade the NVR and not break the cameras. Any information would be great. I think the NVR is Australia but not sure. Here's my set up so far

What new features?

Short answer: No you can't upgrade them.

Worth checking though in my opinion is if the cameras (and the NVR) are showing as English via their currently running firmware:
http://<camera_IP_address>/SDK/language
The camera serial numbers suggest CH region origin so as @Del Boy suggests - they should not be upgraded as a 'language mismatch' error will result with newer NVR firmware.
