Hello,
i recently installed some of those Cameras outside of an Restaurant.
Any moving Objects are just a mess of Pixels.
I tryd lots of different Settings. AI SSA ON/OFF , Different Codecs,AI Encoding ON/OFF and so on.
But nothing really changed it.
Please take a look at the Video.What you think?

But your bigger problem is adjusting the settings in the camera specifically/primarily
Exposure and DNR

Here's my DAY settings for a different camera but will get you started. Leave eveything else alone until you get this part right. You'll need different settings for day and night.

On that nighttime video, try exposure of Manual 1/60 and DNR at 45 to get in the ballpark.

Nighttime color is hard. Those cameras arent the best for that due to their small sensor. You may find you get a better image in B&W running IR
