You can splice them, just make sure you get them back correct! if you reverse the dc polarity, it will burn up the camera.
Then have to seal enough to be outside.
There wouldn’t be any interference issues? Should I solder or just splice shrink wrap and seal would do?

I have seen a splice where there was no shield for close to 6 inches, and it still worked.
I have spliced them where it's closer to 1/2" of unshielded and had no problems. I would solder to cut down on corrosion.
I had a pack rat problem in one of the pole barns, and they kept chewing the wires. I spliced them so many times
I really wondered why they worked. Eventually the bait worked and the rats were gone. Then I replaced the wires with
cat 5 and used balum on each end to convert to balanced pair. Works great.
