After Downgrading and changing the mtdblock5 / mtdblock6, the camera (DS-2CD2632F-IS) was working correctly.
Later I tried to upgrade the camera to 5.3.0.

Since that, I can’t connect to the camera.

In the log of Whireshark is no network-connectivity of the camera (connected to a switch or with a crossover cable).

Now I want connect the camera with a serial cable.

I'm not sure where the correct connector on the camera is!

Is the connector on the photo the correct one? If so, what is the cable assignment?

What does SADP show, if anything? Is it on an IP address in the same range as the PC?

Worth trying, if you have not done so already, is the Hikvision tftp updater tool and the '5.3.0 to 5.2.5 downgrader' from here : Custom Firmware Downgrader 5.3.0 Chinese to 5.2.5 English
The UDP broadcast packet that probes for the updater at power-on is easy to miss.
Another test is to set the PC IP address to 192.0.0.128 and start a continuous ping to 192.0.0.64 and power on the camera.
Normal would be 2 or 3 responses not long after power on.

But if you have to resort to the serial console -
Plenty of posts on the forum about these connectors and the needed wiring.
That does look like the correct type of connector - but you should check if there is another the same.

You need to buy 'micro zh jst 4-pin 1.5mm cabled connector.'
And the serial interface is TTL levels, not classic RS-232, so the interface could be 'PL2303 USB to TTL convertor' or equivalent.

The camera is not visible in SADP (other cameras are visible).

When starting the tftp updater tool, the camera does not respond (captured with whireshark, too)

Also a continuous ping to the address 192.0.0.64 (PC has the address 192.0.0.128) is not successful.

I have seen the posts to the connect via serial console, but I am not quite sure, the connector on the photo is the right one.

That doesn't sound promising, no traffic, no SADP visibility.
But much more detail will be available in the serial console.
As I stated - the connector in your picture looks like the right type.
If there is no other the same, it will likely be the serial console.
