I had dialup for a long while too. Stuff was exciting back then if slow and expensive. We paid by the minute for a landline connection and for the internet connection on top of it. I remember my first internet account was for 10 hours pay as you go.
Dish internet with its latency and caps - as you've confirmed - was out of the question for me during a property search. While it may be fine for casual use when really no other option exists, it isn't a choice I'd make except maybe for a boat or RV that goes into off the grid territory.
