Easy. No different than terminating your own cable. Lots of posts here on the order of the cable. Just buy a female connector and attach it correctly and off you go.

Buy what's known as "punchdown keystone jack" which is a female RJ-45 jack with IDC (Insulation Displacement Contacts), the wire is to be inserted with the proper punchdown tool (sometimes supplied so read details or look for a cheap one since you likely won't do them often enough to justify spending $10 to $40 for the impact version).
BEFORE you go snipping wires use a continuity checker and a visual exam to write down the existing color code (which color of wire goes to what pin of the RJ-45).

After opening it up, it looks like the best road to take is to order a replacement cable from Ali. It's all of $6. I think the hardest part is going to be removing the original epoxy that is sealing around the cable. That stuff is SOLID.

You're right but it IS doable because as you take it slowly the worse should be only the outer white/beige PVC jacket gets boogered* up and the colored wires under it don't.
*"Boogered up": a technical term used a lot in the Southern U.S.
