I am reterminating an IP camera to a new cat 5 jack, however the camera wire has a red / red & white stripe and a Black / Black & white stripe instead of blue and brown wires. Does anyone have any idea how to pair them up correctly? Im not sure it matters, but I use t568A.

Are you sure it's cat-5 cable? Post a pic?

Does the cable consist of 4 twisted pairs? Can you read anything on the jacket.

T568B is used most often for data and T568A is used most for phone.

I think he means the cable coming out of the camera. First OP needs to tell us what camera it is.
If OP has the old female connector a continuity tester can tell you what wire goes where.
