I would say a rodent of some type. He wanted to make sure it was dead or close to it before he picked it up.

We have tree squirrels, rats, mice, rabbits, ground squirrels, and gophers around here. I don't see much or any tail, so it might be a gopher.

These rabbits are "cavorting," which is a mating ritual. The higher they jump, the more excited they are!

This the longest pursuit I've seen yet. I thought a coyote was good for one dash, like a cheetah, but apparently they've got more endurance than that.
He's got something in his mouth at 03:44:24 on the burned in timestamp (00:17 YouTube time). Based on the tail I'd say it's a squirrel.
But then later he's got what looks like a mouse or rat at 03:45:20 (01:11 YouTube time).
Don't let your coyotes smoke crack.
