The Dahua is switching to full black and white mode at night. They're throwing away any color information.
The Ubiquiti camera is still allowing some color information to come through, though most of the frame is IR-illuminated.
If you run the Ubiquiti image through a black-and-white filter, you'll end up with basically the Dahua image.
Which do you prefer? We opted to keep the color information at night for a bit of extra information. The colors are going to look a bit weird with the mix of IR illumination and having the IR filter out of the way, but it's still usually enough to get some clues about the color of a car. The idea was to keep as much image information as we could collect at the sensor and let the operator decide what to do with it. Alternatively, we could discard all color info and go pure B&W like the Dahua.
