The first supports a higher throughput 100Mbps vs 50 in the bottom three...other differences include the amount of poe ports ...the project model seems to allow a 6mp camera ..but its irrelevant now, and in two years from now the nvr will be irrelevant...
Everything is in the specs..just pull them side by side and read and compare.

Just to complicate things I could throw another model into the mix - though you'll not find it yet on the usual Hikvision websites (it's on the Chinese one). It seems to be an updated model with improved performance over the 76xx series.
DS-7816N-E2/P8 which can be purchased in several places such as http://www.aliexpress.com/store/product/Hikvision-NVR-16-road-2-disk-8-way-POE-NVR-engineering-machine-specialized-monitoring-equipment-wholesale/920586_2044227513.html
I just had one delivered this week, and so far it's looking pretty good with the 3.0.8 firmware.
This is rated for 16 channels, 100Mbps aggregate video, has 8 POE ports, a dual-core processor (haven't looked to see what model yet) and 500MB RAM, supports 2xSATA discs up to 4TB.
One of the features I was looking for was the ability to add 3rd-party IP cams as well as the Hikvision products - and it seems to work well.
I've a few cheap but good spec Chinese cameras (eg Amovision, IPCC, Vanxse, Dericam as well as Hikvision DS-2CD2032) and all have worked just fine using both RTSP/TCP and ONVIF selections. Not just on the LAN port but also on the POE ports.

Hi and thank you for your response

So the 7608NI-SE-P does 100mbps on the 8 channel? DAMN, i will only ever have 6 cams max so i am wondering if the extra $100 is worth it?

This on looks interesting, does it come in a 8 channel version? and is it in English?

How many cams do you have hooked up?

Live view with out any stutter?

Hello Dave,
Yes, it comes in an 8-channel version, though be aware this is rated at 50Mbps video bandwidth. For example: http://www.aliexpress.com/store/product/Hikvision-NVR-8CH-Plug-Play-POE-8-network-interface-2-SATA-HDD-4TB-each-Up-to/920586_2041524321.html
Be aware also that the non-POE versions are (even) cheaper.
Yes, it's in English.
I've currently got 5 cams connected with another 2 Hikvision on order
Live View is fine, via a PC. I haven't yet connected up the HDMI output.
Remember that stuttering when viewing full HD using a PC could also be caused by insufficiently fast graphics card in the PC.
When I started using a lot of full HD video a while back (helmet cam, car dash cam, CCTV) I needed to upgrade my PCs graphics card to remove jerkiness when playing these videos. This made a big difference.
